Mindful Gardening cooks! I make my favourite one-pot meal using local, organic root vegetables from Cookstown Greens (https://www.cookstowngreens.com). This video premiered on What’s Cooking, Innisfil? on Saturday, March 20, 2021 as part of the Dinner and A Movie program during Virtual Innisfil Seedy Saturdays.
1 small onion
1.5 lb total root vegetable: beets, carrots, potatoes
1 tbs. olive oil
2 tbs. balsamic glaze
dried herb of choice: recommend basil, rosemary or thyme
salt & pepper to taste
Preheat oven to 425.
Cut onion into thin slices.
Add olive oil to pan and add onions.
Roughly chop root vegetables into about 1-inch chunks and add to pan.
Cut sausage into similarly sized pieces as the vegetables.
Gently push the pieces between the vegetable chunks.
Drizzle balsamic glaze over vegetables and sausage, and sprinkle herbs, salt and pepper.
Cover pan with lid or aluminum foil and bake for 30 minutes.
After 30 minutes, remove lid and gently toss the vegetables and sausage.
Bake uncovered for an additional 15 minutes.
Scoop into a bowl and enjoy!
